- 1 pound boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup crumbled feta cheese
- 1/4 cup honey
- 1 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and black pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
- While the chicken is cooking, in a small bowl, mix together the crumbled feta cheese, honey, red pepper flakes, and lemon juice until well combined.
- Once the chicken is browned, remove the skillet from heat. Spoon the feta mixture evenly over the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.

- For added flavor, marinate the chicken in olive oil, lemon juice, and herbs for 30 minutes before cooking.
- Substitute the feta cheese with goat cheese for a different flavor profile.
