Description

 Sweet, savory, and oh-so-satisfying — this honey garlic chicken and veggies skillet is a quick one-pan dinner with big flavor and minimal cleanup.


Ingredients

Scale
  • 1 ½ lbs chicken thighs or breasts, cut into chunks
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 garlic cloves, minced
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions

  • In a skillet, heat oil and cook chicken until browned.

  • Add vegetables and sauté until just tender.

  • In a bowl, mix honey, soy sauce, garlic, and vinegar.

  • Pour sauce into skillet, add slurry, and stir until sauce thickens.

  • Serve with rice or quinoa.
