- 1 ½ lbs chicken thighs or breasts, cut into chunks
- 1 tbsp olive oil
- 1 cup broccoli florets
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1/4 cup honey
- 3 tbsp soy sauce
- 4 garlic cloves, minced
- 1 tbsp rice vinegar
- 1 tsp cornstarch mixed with 1 tbsp water
Instructions
In a skillet, heat oil and cook chicken until browned.
Add vegetables and sauté until just tender.
In a bowl, mix honey, soy sauce, garlic, and vinegar.
Pour sauce into skillet, add slurry, and stir until sauce thickens.
Serve with rice or quinoa.
