This hearty Vegetable Beef Soup is loaded with tender beef, fresh vegetables, and savory broth — comforting, filling, and perfect for cozy nights.


Ingredients

Scale
  • 1 lb stew beef, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 2 cups water
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 cup green beans
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

    • Heat oil in a pot and brown the beef. Set aside.

    • Sauté onion and garlic until soft.

    • Add beef, broth, water, tomatoes, and seasonings.

    • Bring to a boil, then reduce heat and simmer for 1 hour.

    • Add carrots, potatoes, green beans, and corn. Cook until veggies are tender, about 30 minutes.

    • Taste and adjust seasoning. Serve hot.
