- 1 lb stew beef, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups beef broth
- 2 cups water
- 3 carrots, sliced
- 3 potatoes, diced
- 1 cup green beans
- 1 cup corn kernels
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
Heat oil in a pot and brown the beef. Set aside.
Sauté onion and garlic until soft.
Add beef, broth, water, tomatoes, and seasonings.
Bring to a boil, then reduce heat and simmer for 1 hour.
Add carrots, potatoes, green beans, and corn. Cook until veggies are tender, about 30 minutes.
Taste and adjust seasoning. Serve hot.
