Description

This hearty and comforting Beef Stew Crockpot recipe is a cozy, set-it-and-forget-it meal packed with tender beef, potatoes, carrots, and rich savory broth. Perfect for chilly nights and easy family dinners!


Ingredients

  • pounds beef stew meat, cut into chunks
  • 4 medium potatoes, peeled and diced
  • 4 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 tablespoon tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch + 2 tablespoons water (for thickening, optional)

Instructions

    • Add beef, potatoes, carrots, onion, and garlic to the slow cooker.

    • Pour in beef broth, then stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.

    • Cover and cook on low for 8–10 hours or high for 4–5 hours until beef is tender.

    • To thicken the stew, mix cornstarch and water in a small bowl, then stir into the stew during the last 30 minutes of cooking.

    • Adjust seasoning to taste before serving.

 

Notes

    • Browning the beef before adding to the slow cooker adds extra depth of flavor.
    • Feel free to swap potatoes for parsnips or add peas in the final 30 minutes.
    • Leftovers store well for up to 4 days in the fridge or freeze for up to 3 months.
