Ingredients

  • 4 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 medium potatoes, peeled and diced
  • 1 medium parsnip, diced
  • 1 cup green beans, chopped
  • 1 cup cabbage, shredded
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced carrots, potatoes, parsnip, and green beans to the pot. Cook for about 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and add the shredded cabbage, thyme, rosemary, salt, and pepper.
  6. Cover and let the soup simmer for 25-30 minutes, or until all the vegetables are tender.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier soup, blend half of the soup with an immersion blender and then mix it back in.
