- 4 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 medium potatoes, peeled and diced
- 1 medium parsnip, diced
- 1 cup green beans, chopped
- 1 cup cabbage, shredded
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrots, potatoes, parsnip, and green beans to the pot. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low and add the shredded cabbage, thyme, rosemary, salt, and pepper.
- Cover and let the soup simmer for 25-30 minutes, or until all the vegetables are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier soup, blend half of the soup with an immersion blender and then mix it back in.
- Add cooked lentils or beans for extra protein and texture.
