- 2 medium zucchinis, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-4 minutes until they start to soften.
- Add the minced garlic and cook for another 1 minute, stirring frequently to avoid burning.
- Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes.
- Stir in the diced zucchini, Italian seasoning, paprika, salt, and pepper. Cook for an additional 5-6 minutes, until the zucchini is tender.
- Add the halved cherry tomatoes and cook for another 2-3 minutes until they are heated through.
- If desired, sprinkle grated Parmesan cheese over the top and let it melt for a minute.
- Garnish with fresh basil before serving.
Notes
- For added flavor, consider adding a splash of balsamic vinegar or a squeeze of lemon juice before serving.
- Substitute ground turkey with ground chicken or beef for a different taste.
