  • 1 green bell pepper, diced

  • Salt and pepper to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Mix in the diced red and green bell peppers, smoked paprika, dried oregano, salt, and pepper. Cook for another 5 minutes until the peppers are tender.
  5. Stir in the diced tomatoes and cooked rice, mixing well to combine. Cook for an additional 2-3 minutes until heated through.
  6. Remove from heat and sprinkle the shredded cheese on top. Cover the skillet for a few minutes to allow the cheese to melt.
  7. Serve warm, garnished with fresh herbs if desired.
