A delicious and easy-to-make Ground Turkey and Peppers Skillet that combines ground turkey with colorful bell peppers, spices, and cheese for a satisfying dinner.

- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup diced tomatoes (canned or fresh)
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or mozzarella)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Mix in the diced red and green bell peppers, smoked paprika, dried oregano, salt, and pepper. Cook for another 5 minutes until the peppers are tender.
- Stir in the diced tomatoes and cooked rice, mixing well to combine. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and sprinkle the shredded cheese on top. Cover the skillet for a few minutes to allow the cheese to melt.
- Serve warm, garnished with fresh herbs if desired.
Notes
- For added flavor, consider adding a teaspoon of chili powder or a splash of hot sauce for some heat.
- You can substitute the ground turkey with ground chicken or beef, or make it vegetarian by using black beans or lentils instead.
