Description

This Portuguese Grilled Chicken is packed with bold, smoky flavors from a tangy and spicy marinade. Inspired by the famous Piri Piri chicken, this dish features tender, juicy chicken grilled to perfection with a deliciously charred exterior. Serve it with rice, roasted potatoes, or a fresh salad for an authentic Portuguese meal!

    • 1 whole chicken (spatchcocked) or 4 bone-in chicken thighs
    • 3 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 2 tablespoons red wine vinegar
    • 2 tablespoons paprika (preferably smoked)
    • 1 tablespoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1 teaspoon salt
    • ½ teaspoon red pepper flakes (adjust to taste)
    • 1 teaspoon cayenne pepper (optional for extra heat)
    • 1 tablespoon honey (optional, for slight sweetness)

 


Instructions

  • Prepare the Marinade – In a bowl, whisk together olive oil, lemon juice, red wine vinegar, paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, red pepper flakes, and cayenne pepper.

  • Marinate the Chicken – Rub the marinade all over the chicken, ensuring it’s well-coated. Let it marinate for at least 1 hour (or overnight for deeper flavor).

  • Preheat the Grill – Set your grill to medium-high heat (375-400°F / 190-200°C). Lightly oil the grates.

  • Grill the Chicken – Place the chicken skin-side down on the grill. Cook for about 5-7 minutes per side, then lower the heat and continue grilling for 25-30 minutes, flipping occasionally, until the internal temperature reaches 165°F (75°C).

  • Rest & Serve – Let the chicken rest for 5 minutes before slicing. Serve with lemon wedges and your favorite sides.

Notes

  • For a more intense flavor, marinate the chicken overnight.
  • Adjust the spice level by adding more or less cayenne pepper.
  • Use a meat thermometer to ensure the chicken is fully cooked but still juicy.
  • No grill? You can roast the chicken in the oven at 400°F (200°C) for 35-40 minutes
