Grilled Chicken Yakitori Skewers are a delicious and easy-to-make dish featuring marinated chicken thighs grilled to perfection.

- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons mirin (or substitute with rice vinegar and a pinch of sugar)
- 2 tablespoons sake (or substitute with white wine)
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Green onions, cut into 2-inch pieces, for garnish
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a medium bowl, whisk together soy sauce, mirin, sake, brown sugar, sesame oil, ground ginger, and black pepper until the sugar is dissolved.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto the soaked skewers, alternating with pieces of green onion.
- Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a couple of minutes before serving.
Notes
- For a spicy kick, add a teaspoon of sriracha or chili paste to the marinade.
- Substitute chicken with firm tofu or vegetables like bell peppers and mushrooms for a vegetarian option.
