- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 4 strips of cooked bacon, crumbled
- 1/2 cup crumbled blue cheese (or feta cheese)
- 1/4 cup Caesar dressing (store-bought or homemade)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat. In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture over the chicken breasts.
- Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
- In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, avocado, crumbled bacon, and blue cheese.
- Slice the grilled chicken and add it to the salad. Drizzle with Caesar dressing and toss gently to combine.
- Garnish with fresh parsley before serving.
