- 2 pounds boneless, skinless chicken thighs
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F.
- In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat.
- Add the minced garlic, thyme, rosemary, oregano, salt, and pepper to the skillet. Sauté for about 1 minute until fragrant.
- Add the chicken thighs to the skillet, cooking for 5-7 minutes on each side until browned.
- Remove the skillet from heat and squeeze the lemon juice over the chicken.
- Dot the remaining 2 tablespoons of butter on top of the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
- For a creamier sauce, add 1/4 cup heavy cream to the skillet before baking.
- Swap out chicken thighs for chicken breasts for a leaner option, adjusting cooking time as needed.
