A quick and delicious recipe for Garlic Butter Salmon with Asparagus, perfect for a healthy meal.
Ingredients
Scale
- 2 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 pound asparagus, trimmed
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Place the salmon fillets on one side of the prepared baking sheet and drizzle with olive oil. Season with salt and black pepper.
- In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Remove from heat and stir in the lemon juice and lemon zest.
- On the other side of the baking sheet, arrange the trimmed asparagus. Drizzle with olive oil and season with salt and pepper.
- Pour the garlic butter mixture over the salmon fillets and asparagus, ensuring everything is well coated.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
- Garnish with chopped parsley before serving.
Notes
- For added flavor, sprinkle some red pepper flakes over the salmon before baking for a spicy kick.
- Substitute the asparagus with broccoli or green beans for a different vegetable option.
