Ingredients
- 3–4 lb beef roast (top round or sirloin)
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped (or 2 tsp dried)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: 1/2 teaspoon onion powder
- Optional: 1/2 cup beef broth for roasting
Instructions
Preheat oven to 375°F (190°C). Pat roast dry with paper towels.
In a small bowl, mix olive oil, garlic, rosemary, salt, pepper, and onion powder.
Rub mixture all over the beef roast.
Place roast on a rack in a roasting pan. Optionally add beef broth to the bottom.
Roast uncovered for 1 to 1 1/4 hours (or until internal temp reaches 135°F for medium rare).
Remove from oven and tent with foil. Let rest for 10–15 minutes before slicing.
