Ingredients

- 8 oz pasta (your choice)
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup shredded cheese (Gruyère or Swiss)
- 1/4 cup chopped fresh parsley
- 1 tablespoon balsamic vinegar
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat and add the sliced onions.
- Sprinkle sugar, salt, and pepper over the onions and cook until caramelized, about 15-20 minutes.
- Add beef broth to the skillet and simmer for an additional 5 minutes.
- In a large bowl, combine the cooked pasta, caramelized onions, shredded cheese, parsley, and balsamic vinegar.
- Toss everything together until well mixed and serve warm or chilled.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth.
- Feel free to add other vegetables like bell peppers or cherry tomatoes for extra flavor.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
