- 2 pounds beef short ribs
- 1 tablespoon olive oil
- 4 large onions, thinly sliced
- 3 tablespoons butter
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- Salt and pepper to taste
- 4 slices French bread
- 1 cup shredded Gruyère or mozzarella cheese
Instructions
- Season and sear the short ribs in oil, then remove.
- In the same pot, melt butter and caramelize onions until golden, about 25 minutes.
- Return ribs to the pot, add broth, Worcestershire, thyme, salt, and pepper.
- Cover and simmer for 2 hours until meat is tender.
- Remove bones and shred beef.
- Ladle soup into bowls, top with toasted bread and cheese, and broil until bubbly.
