  • 1 large egg

  • 2 tablespoons butter, for frying

Instructions

  1. In a mixing bowl, combine the farmer’s cheese (or ricotta), egg, flour, sugar, vanilla extract, salt, and baking powder. Mix until well combined and a soft dough forms.
  2. Dust your hands with flour and divide the dough into 8 equal portions. Roll each portion into a ball and then flatten it slightly to form a patty.
  3. Heat a large skillet over medium heat and add the butter. Once melted and bubbling, add the cheese patties to the skillet, making sure not to overcrowd the pan.
  4. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.
  5. Remove the pancakes from the skillet and place them on a paper towel-lined plate to absorb excess grease.
