- 1 cup farmer’s cheese or ricotta cheese, well-drained
- 1 large egg
- 1/4 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 2 tablespoons butter, for frying
- Powdered sugar, for serving

Instructions
- In a mixing bowl, combine the farmer’s cheese (or ricotta), egg, flour, sugar, vanilla extract, salt, and baking powder. Mix until well combined and a soft dough forms.
- Dust your hands with flour and divide the dough into 8 equal portions. Roll each portion into a ball and then flatten it slightly to form a patty.
- Heat a large skillet over medium heat and add the butter. Once melted and bubbling, add the cheese patties to the skillet, making sure not to overcrowd the pan.
- Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.
- Remove the pancakes from the skillet and place them on a paper towel-lined plate to absorb excess grease.
- Serve warm, dusted with powdered sugar and topped with fresh berries if desired.
Notes
- For a gluten-free version, substitute the all-purpose flour with almond flour or a gluten-free flour blend.
- Add a pinch of cinnamon or nutmeg to the batter for extra flavor, or mix in chocolate chips for a sweet twist.
