  • 1/2 cup shredded cheddar cheese (optional)

Instructions

    • Cook the Ground Beef:
      Heat a large skillet over medium heat. Add the ground beef and cook, breaking it into crumbles, until browned. Drain any excess grease and set aside.
    • Sauté the Aromatics:
      In the same skillet, add the chopped onion and minced garlic. Sauté for 2–3 minutes, or until softened and fragrant.
    • Toast the Rice:
      Stir in the uncooked rice, smoked paprika, chili powder, oregano, salt, and pepper. Cook for 1–2 minutes to lightly toast the rice and enhance the flavors.
    • Simmer the Ingredients:
      Pour in the beef broth and diced tomatoes (including their juices). Stir well and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
    • Add the Vegetables and Beef:
      Stir in the frozen mixed vegetables and the cooked ground beef. Cover and cook for an additional 5–7 minutes, or until the rice is tender and the vegetables are heated through.
    • Top with Cheese (Optional):
      Sprinkle shredded cheddar cheese over the top, cover the skillet, and let the cheese melt for 2–3 minutes.
    • Serve and Garnish:
      Remove from heat and garnish with fresh parsley, if desired. Serve hot and enjoy!
