- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- In a skillet over medium heat, add olive oil. Once hot, add the shredded rotisserie chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and heat through for about 5 minutes.
- While the chicken is heating, warm the tortillas in a separate skillet or microwave until pliable.
- Assemble the tacos by placing a generous amount of the seasoned chicken on each tortilla.
- Top each taco with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and chopped cilantro.
- Serve immediately with lime wedges on the side for squeezing over the tacos.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the chicken mixture.
