Description
Pecan pie bites are the ultimate mini desserts—crispy, buttery crusts filled with gooey, caramelized pecan filling. These bite-sized treats are easy to make, perfect for any occasion, and guaranteed to disappear in no time.
Ingredients
Scale
- 1 pre-made pie crust (or homemade equivalent)
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/2 cup light or dark corn syrup
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Optional: Mini chocolate chips, shredded coconut, or a splash of bourbon for variation.
Instructions
- Prepare the Pie Crust: Roll out the pie crust on a floured surface. Cut circles slightly larger than the cups of a mini muffin tin. Gently press each circle into the tin, ensuring the dough covers the bottom and sides.
- Make the Filling: In a mixing bowl, whisk together brown sugar, corn syrup, melted butter, egg, vanilla extract, and salt until smooth. Fold in the chopped pecans.
- Assemble: Spoon about 1 tablespoon of the pecan mixture into each crust-lined cup, being careful not to overfill.
- Bake: Preheat your oven to 350°F (175°C). Bake for 20–25 minutes or until the filling is set and the crust is golden brown.
- Cool: Allow the bites to cool in the tin for 10 minutes before transferring them to a wire rack. Serve warm or at room temperature.
