These Fudgiest Gluten-Free Brownie Cookies are rich, chocolatey, and unbelievably gooey. Made without flour but full of deep cocoa flavor, they’re a chocoholic’s dream in cookie form.

- 2 cups powdered sugar
- ½ cup unsweetened cocoa powder
- ¼ tsp salt
- 2 large egg whites
- 1 tsp vanilla extract
- ½ cup chocolate chips
Instructions
Preheat oven to 350°F and line a baking sheet with parchment.
In a bowl, whisk powdered sugar, cocoa powder, and salt.
Add egg whites and vanilla, mixing until a thick batter forms.
Fold in chocolate chips.
Drop spoonfuls onto the baking sheet and bake for 10–12 minutes.
Let cool completely on the baking sheet.
Notes
- These cookies will be very soft right out of the oven—cool fully to set.
