A hearty, cheesy crockpot soup packed with Italian sausage, cheese tortellini, and a rich tomato base. Perfect for busy weeknights and meal prep.


Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 3 cups spinach
  • 1/2 cup heavy cream
  • Grated Parmesan for serving

Instructions

    • In a skillet, brown the sausage with onion and garlic. Drain excess grease.

    • Transfer sausage mixture to crockpot. Add broth, tomatoes, and seasonings. Stir to combine.

    • Cover and cook on low for 6–7 hours or high for 3–4 hours.

    • Add tortellini and spinach. Cook on high for 15–20 minutes.

    • Stir in cream before serving. Top with Parmesan if desired.

 

Notes

  • Add a pinch of red pepper flakes for a little heat.
