A hearty, cheesy crockpot soup packed with Italian sausage, cheese tortellini, and a rich tomato base. Perfect for busy weeknights and meal prep.

- 1 pound Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (28-ounce) can crushed tomatoes
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 (9-ounce) package refrigerated cheese tortellini
- 3 cups spinach
- 1/2 cup heavy cream
- Grated Parmesan for serving
Instructions
In a skillet, brown the sausage with onion and garlic. Drain excess grease.
Transfer sausage mixture to crockpot. Add broth, tomatoes, and seasonings. Stir to combine.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Add tortellini and spinach. Cook on high for 15–20 minutes.
Stir in cream before serving. Top with Parmesan if desired.
Notes
- Add a pinch of red pepper flakes for a little heat.
- Great for freezing before adding tortellini and cream.
