Description

Crock Pot Pepper Steak is a savory and satisfying dish featuring tender strips of beef, colorful bell peppers, and a rich sauce slow-cooked to perfection. It’s a comforting dinner served best over rice or noodles.


Ingredients

  • 2 lbs beef sirloin or flank steak, sliced into thin strips
  • 2 bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • ¼ cup low-sodium soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground ginger
  • ½ tsp black pepper
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions

  • Place the beef, bell peppers, and onion into the slow cooker.

  • Add garlic, diced tomatoes (with juices), soy sauce, Worcestershire sauce, ginger, and black pepper. Stir to combine.

  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until beef is tender.

  • If a thicker sauce is desired, stir in the cornstarch slurry and cook for an additional 15–20 minutes.

  • Serve hot over rice or noodles.

Notes

  • Add a dash of red pepper flakes for a spicy kick.
