Crispy Shrimp and Sweet Potato Fritters are delicious and easy to make, combining the sweetness of sweet potatoes with the savory flavor of shrimp.

- 1 cup sweet potato, grated
- 1 cup shrimp, peeled and deveined, chopped
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup green onions, chopped
- 1/2 cup water (adjust as needed)
- Vegetable oil, for frying
Instructions
- In a large mixing bowl, combine the grated sweet potato, chopped shrimp, all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.
- Gradually add water to the mixture, stirring until a thick batter forms. The batter should be thick enough to hold its shape but not too dry. Adjust the water as needed.
- Fold in the chopped green onions until evenly mixed.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the batter into the oil, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Remove them from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauce.
Notes
- For added flavor, consider mixing in some minced garlic or chopped cilantro into the batter.
- To make it a complete meal, serve the fritters over a bed of mixed greens with a light vinaigrette.
