- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder

- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F.
- Prepare the chicken breasts by placing each between two pieces of plastic wrap and pounding to an even thickness of about 1/2 inch.
- Set up a breading station with flour in one dish, whisked eggs in a second dish, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper in a third dish.
- Dredge each chicken breast in flour, dip in egg, and coat in the breadcrumb mixture.
- Heat olive oil in a large oven-safe skillet over medium heat and cook the breaded chicken for about 4-5 minutes on each side until golden brown.
- Remove the chicken and set aside. In the same skillet, sauté minced garlic for about 30 seconds, then add chicken broth and bring to a simmer.
- Return the chicken to the skillet, spoon garlic sauce over it, and transfer to the oven. Bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F.
- Let it rest for a few minutes before garnishing with fresh parsley and serving.

- For a spicier version, add red pepper flakes to the breadcrumb mixture.
- Substitute chicken with eggplant slices for a vegetarian option; adjust cooking time as necessary.
