Ingredients

  • 2 pounds baby potatoes, halved
  • 1/4 cup olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 lemon, cut into wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the olive oil, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Mix well to create a marinade.
  3. Add the halved baby potatoes to the bowl and toss until they are evenly coated with the marinade.
  4. Spread the potatoes in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through for even cooking.
