Crispy Mojo Potatoes are perfectly roasted baby potatoes coated in a flavorful marinade, resulting in a deliciously crispy exterior and tender interior.

- 2 pounds baby potatoes, halved
- 1/4 cup olive oil
- 1 tablespoon garlic powder
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 lemon, cut into wedges (for serving)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the olive oil, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Mix well to create a marinade.
- Add the halved baby potatoes to the bowl and toss until they are evenly coated with the marinade.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through for even cooking.
- Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh parsley and serve with lemon wedges on the side.
Notes
- For extra flavor, add a teaspoon of cayenne pepper for a spicy kick.
- Try using sweet potatoes instead of baby potatoes for a different taste and added nutrition.
