Instructions
- Sauté the Vegetables
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté for about 5–7 minutes, stirring occasionally, until the vegetables soften.
- Add Potatoes and Lentils
