- 3 cups cooked elbow macaroni
- 1/2 cup mayo
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup celery, finely chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions
In a small bowl, mix mayo, mustard, vinegar, salt, and pepper.
In a large bowl, combine pasta, celery, bell pepper, and onion.
Pour dressing over and mix until coated.
Chill for 1 hour before serving for best flavor.
Garnish with parsley.
