Description
This Olive Garden-inspired crockpot chicken gnocchi soup is cozy, creamy, and full of tender chicken, soft gnocchi, and hearty veggies.
Ingredients

- 1 pound boneless skinless chicken breasts
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup shredded carrots
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (16-ounce) package potato gnocchi
- 2 cups spinach
- 1 cup heavy cream
Instructions
Add chicken, onion, celery, carrots, garlic, broth, thyme, salt, and pepper to crockpot.
Cook on low for 6–7 hours or high for 3–4 hours.
Shred chicken and return to pot. Stir in gnocchi and cook for 30 minutes.
Add spinach and cream. Heat through and serve.
Notes
- For a thicker soup, stir in a cornstarch slurry before serving.
- Swap spinach with kale for a heartier green.
