- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping, thawed
- 1 (14 oz) can coconut cream
- 1 cup shredded sweetened coconut
- 1 cup milk
- 1 (3.4 oz) package instant vanilla pudding mix
- 1 teaspoon vanilla extract
- Additional whipped topping and toasted coconut for garnish (optional)
Instructions
- Preheat your oven to 350°F. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form the crust. Bake for 10 minutes, then remove from the oven and let it cool completely.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Gently fold in 1 cup of whipped topping until well combined. Spread this mixture evenly over the cooled crust.
- In another bowl, whisk together the coconut cream, milk, instant vanilla pudding mix, and vanilla extract until smooth. Let it sit for about 5 minutes to thicken slightly. Pour this mixture over the cream cheese layer and spread it evenly.
- Top the pudding layer with the remaining whipped topping, smoothing it out to cover completely. Sprinkle the shredded coconut over the top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results. This allows the layers to set properly.
- Before serving, you can garnish with additional whipped topping and toasted coconut if desired. Cut into squares and enjoy!
Notes
- For a chocolate twist, substitute half of the graham cracker crumbs with chocolate cookie crumbs for the crust.
- Add a layer of fresh fruit, such as sliced bananas or strawberries, between the cream cheese layer and the pudding layer for added flavor and texture.
