- 2 large sweet potatoes (about 1.5 pounds), peeled and diced into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon lime juice (freshly squeezed)
- 1 teaspoon chipotle powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the diced sweet potatoes, olive oil, honey, lime juice, chipotle powder, garlic powder, smoked paprika, salt, and pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
- Try substituting maple syrup for honey for a vegan option.
