Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the drained chickpeas, diced cucumber, cherry tomatoes, and red onion.
  2. In a separate bowl, mix together the Greek yogurt, chopped dill, lemon juice, olive oil, minced garlic, salt, and pepper until well combined.
  3. Pour the yogurt mixture over the chickpea and vegetable mixture. Gently toss everything together until well coated.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
