This cozy and cheesy Vegetable Casserole is a perfect meatless main or vibrant side, packed with colorful veggies, creamy sauce, and a crunchy topping.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 small onion, chopped
  • 1 can condensed cream of mushroom soup
  • ½ cup sour cream
  • 1½ cups shredded cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers (like Ritz)
  • 2 tablespoons melted butter

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • Steam broccoli, cauliflower, and carrots until just tender.

  • In a large bowl, mix soup, sour cream, garlic powder, onion, peas, and cheese.

  • Fold in the vegetables and season to taste.

  • Pour into dish. Mix crushed crackers with melted butter and sprinkle over top.

  • Bake for 30–35 minutes until bubbly and golden.
