- 2 cups orzo pasta
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups broccoli florets (fresh or frozen)
- 4 cups chicken broth
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ¼ cup heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the orzo and toast it for 1-2 minutes, stirring frequently. This will enhance the flavor.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to a simmer and add the broccoli florets. Cook for about 8-10 minutes, or until the orzo is tender and the broccoli is bright green.
- Stir in the cooked chicken, cheddar cheese, Parmesan cheese, and heavy cream. Mix until the cheeses are melted and everything is well combined.
- Taste and adjust seasoning with more salt and pepper if needed. Serve hot.
Notes
- For a lighter version, substitute half of the orzo with cauliflower rice.
- Add a splash of lemon juice or some red pepper flakes for a zesty kick.
