Description

A creamy, cheesy comfort food classic that’s the perfect side or main dish. Loaded with tender broccoli and melty cheese, this casserole is quick to assemble and always a crowd favorite.


Ingredients

  • 4 cups fresh broccoli florets (or frozen, thawed)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup mayonnaise
  • 2 large eggs, beaten
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ cup chopped onion
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup crushed Ritz crackers or breadcrumbs (optional topping)
  • 2 tbsp melted butter (for topping)

Instructions

    • Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.

    • Steam or blanch broccoli for 2-3 minutes until just tender, then drain and pat dry.

    • In a large bowl, combine the cream of mushroom soup, mayonnaise, beaten eggs, 1 cup cheddar cheese, onion, garlic powder, salt, and pepper.

    • Fold in the broccoli until well coated.

    • Pour the mixture into the prepared baking dish and spread evenly.

    • Sprinkle the remaining ½ cup of cheddar cheese on top.

    • If using, mix the crushed crackers or breadcrumbs with melted butter and sprinkle over the cheese layer.

    • Bake uncovered for 35-40 minutes, until bubbly and golden on top.

    • Let rest for 5 minutes before serving.

 

Notes

  • You can use cream of chicken soup instead of mushroom for a milder flavor.
  • Add cooked rice or chicken to make it a full meal.
