  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 can (10 oz) diced tomatoes, undrained
  • 1 cup frozen peas or mixed vegetables (optional)
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and sauté for 2-3 minutes until softened.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  • Season beef mixture with paprika, oregano, salt, and black pepper.
  • Stir in uncooked rice, beef broth, diced tomatoes (with juices), and peas or vegetables if using.
  • Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  • Cover tightly with foil and bake for 30 minutes.
  • Remove foil, sprinkle shredded cheddar cheese evenly over the top.
  • Return casserole to oven and bake uncovered for an additional 10-12 minutes until cheese is melted and bubbly.
  • Garnish with chopped parsley and serve hot.
