- 2 cups beef broth
- 1 can (10 oz) diced tomatoes, undrained

- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and sauté for 2-3 minutes until softened.
- Stir in minced garlic and cook for another minute until fragrant.
- Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Season beef mixture with paprika, oregano, salt, and black pepper.
- Stir in uncooked rice, beef broth, diced tomatoes (with juices), and peas or vegetables if using.
- Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
- Cover tightly with foil and bake for 30 minutes.
- Remove foil, sprinkle shredded cheddar cheese evenly over the top.
- Return casserole to oven and bake uncovered for an additional 10-12 minutes until cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot.
