Description

Charleston Chewies are deliciously sweet bars made with butter, brown sugar, eggs, and a delightful mix of pecans and coconut.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup chopped pecans (or walnuts)
  • 1 cup shredded coconut
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the melted butter and brown sugar. Stir until well blended.
  3. Add the eggs and vanilla extract to the butter mixture, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chopped pecans and shredded coconut until evenly distributed throughout the batter.
  6. Pour the batter into the prepared baking pan, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the chewie bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares or bars.

Notes

  • For a chocolatey twist, add 1 cup of chocolate chips to the batter before baking.
  • Substitute the nuts with dried fruit like cranberries or raisins for a different flavor and texture.
