A refreshing and crunchy salad made with grated carrots, diced apples, and a creamy yogurt dressing.
Ingredients

- 3 medium carrots, grated
- 2 medium apples, cored and diced (preferably Granny Smith or Honeycrisp)
- 1/2 cup raisins
- 1/2 cup walnuts, chopped
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the grated carrots, diced apples, raisins, and chopped walnuts.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
- Pour the yogurt dressing over the carrot and apple mixture. Toss everything together until well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a refreshing side dish or light lunch.
Notes
- For added crunch, consider substituting the walnuts with sunflower seeds.
- To make it vegan, replace the Greek yogurt with a plant-based yogurt and the honey with maple syrup.
