Ingredients

Instructions
- In a large mixing bowl, combine the shredded carrots, raisins, and chopped walnuts.
- In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, ground cinnamon, salt, and pepper until smooth.
- Pour the dressing over the carrot mixture and toss until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional walnuts if desired.

- For added crunch, consider mixing in some diced apples or celery.
