- 1 pound boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 8 ounces fettuccine pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with Cajun seasoning, ensuring they are evenly coated.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown color. Remove from the skillet and let rest for a few minutes before slicing.
- While the chicken is resting, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
- In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly. Slice the chicken and place it on top of the pasta.
- Garnish with chopped fresh parsley before serving.
Notes
- For a spicier version, add a pinch of cayenne pepper to the Cajun seasoning or incorporate diced jalapeños into the sauce.
- Substitute the fettuccine with whole wheat pasta or zucchini noodles for a healthier option.
