- 2 cups fresh broccoli florets, chopped
- 1 cup cauliflower florets, chopped
- 1 cup shredded carrots
- 1/2 cup red onion, finely chopped
- 1/2 cup cooked bacon, crumbled
- 1/2 cup sunflower seeds
- 1/2 cup raisins or dried cranberries
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the broccoli, cauliflower, carrots, red onion, bacon, sunflower seeds, and raisins. Toss gently to mix all the ingredients evenly.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and stir until all the ingredients are well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, give the salad a good stir and adjust seasoning if necessary.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- You can also add chopped apples or pears for a sweet crunch.
- For extra flavor, try adding some crumbled feta cheese or a sprinkle of lemon juice before serving.
