For the Pancakes:

  • 1 egg, separated
  • 75g plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon caster sugar
  • 100ml milk
  • 1 tablespoon neutral-tasting oil

For the Smash Burgers:

    • 250g 15%-fat beef mince
    • 2 slices American cheese or mild cheddar
    • 30ml burger sauce
    • 40g sliced gherkins

Instructions

Prepare the Pancake Batter:

  1. Separate the egg white and yolk into two bowls.
  2. Use an electric whisk to beat the egg white until soft peaks form.
  3. In a separate bowl, whisk together the egg yolk, plain flour, baking powder, and caster sugar.
  4. Slowly whisk in the milk to create a smooth batter.
  5. Gently fold the whipped egg white into the batter for a light, fluffy texture.

Cook the Pancakes:

  1. Heat half the oil in a non-stick pan over medium heat.
  2. Spoon a quarter of the batter into the pan, forming a circular pancake.
  3. Cook for 2–3 minutes on each side until golden brown and set.
  4. Repeat with the remaining batter to make four pancakes. Keep the pancakes warm in a low oven.

Prepare the Smash Burgers:

  1. In the same pan, heat the remaining oil over high heat.
  2. Divide the beef mince into two equal balls.
  3. Place one ball in the pan and use a spatula to smash it into a thin patty.
  4. Cook for 2–3 minutes until the edges are crispy and browned. Flip the patty, place a slice of cheese on top, and cook for another 1–2 minutes until the cheese melts.
  5. Repeat with the second ball of mince.

Assemble the Smash Burger Pancakes:

  1. Place one pancake on a plate as the base layer.
  2. Add a cheesy beef patty, drizzle with burger sauce, and top with sliced gherkins.
  3. Place another pancake on top to create a layered smash burger pancake.
  4. Repeat for the second serving.

Serve and Enjoy:

    1. Serve immediately while warm.
    2. Pair with a side of crispy fries or a refreshing drink for a complete meal.
