- 2 large russet potatoes, peeled and cut into fries
- 4 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cheese curds
- 4 large eggs
- 1/2 cup gravy (homemade or store-bought)
- 2 green onions, sliced (for garnish)
Instructions
- Preheat the oven to 425°F.
- Toss the cut potatoes with vegetable oil, salt, and black pepper in a large bowl until evenly coated. Spread the fries in a single layer on a baking sheet.
- Bake the fries for 30-35 minutes, flipping halfway through, until golden brown and crispy.
- While the fries are baking, prepare the gravy according to package instructions or your favorite recipe.
- In a skillet, cook the eggs to your liking (fried, scrambled, or poached).
- Once the fries are done, remove them from the oven and immediately sprinkle the cheese curds over the hot fries.
- Pour the hot gravy over the fries and cheese curds, then top with the cooked eggs.
- Garnish with sliced green onions before serving.
Notes
- For a spicy kick, add a dash of hot sauce to the gravy or sprinkle some crushed red pepper flakes on top.
- Substitute the cheese curds with shredded cheddar or mozzarella for a different flavor profile.
