Description

Beef Noodle Soup combines tender chunks of beef, chewy noodles, and savory broth into one comforting bowl — simple, soothing, and satisfying


Ingredients

Scale
  • 1 lb beef stew meat
  • 1 tablespoon oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 2 cups water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 oz egg noodles
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

    •  
    • Brown beef in oil over medium heat. Set aside.

    • Sauté onion and garlic. Add beef, broth, water, and veggies.

    • Bring to a boil, then simmer 45 minutes.

    • Add egg noodles and cook 8–10 minutes.

    • Season to taste. Garnish with parsley and serve warm.

  • Swap in rice noodles or ramen for variety.
  • Add spinach or kale for extra nutrients.
  • Freeze broth and beef without noodles to avoid mushiness.
