Ingredients

- 1 lb beef stew meat
- 1 tablespoon oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 6 cups beef broth
- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 oz egg noodles
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
Brown beef in oil over medium heat. Set aside.
Sauté onion and garlic. Add beef, broth, water, and veggies.
Bring to a boil, then simmer 45 minutes.
Add egg noodles and cook 8–10 minutes.
Season to taste. Garnish with parsley and serve warm.

- Swap in rice noodles or ramen for variety.
- Add spinach or kale for extra nutrients.
- Freeze broth and beef without noodles to avoid mushiness.
