Ingredients
- 12 egg roll wrappers
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1½ cups fresh or frozen blueberries
- Oil, for frying (vegetable or canola)
- Powdered sugar, for dusting (optional garnish)
- Sweet dipping sauce or whipped cream, for serving (optional)
Instructions
Prepare Filling:
In a bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Assemble Egg Rolls:
Place an egg roll wrapper on a flat surface. Add about 2 tablespoons of cream cheese filling in the center, then top with 1-2 tablespoons of blueberries.
Fold the bottom corner up over the filling, tuck in both sides, and roll up tightly. Seal the edge with a dab of water. Repeat with remaining wrappers and filling.
Cook Egg Rolls:
Frying Method: Heat about 1–2 inches of oil in a deep skillet or pot to 350°F (175°C). Fry egg rolls in batches, turning occasionally, until golden brown, about 2–3 minutes per side. Drain on paper towels.
Air Fryer Method: Lightly spray egg rolls with cooking spray. Air fry at 375°F (190°C) for 8–10 minutes, flipping halfway, until crisp and golden
