A delicious twist on the traditional BLT, this BLT Pasta Salad combines rotini pasta with crispy bacon, fresh vegetables, and a creamy dressing for a refreshing dish.

- 8 ounces rotini pasta
- 6 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, romaine lettuce, cheddar cheese, and red onion.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, taste and adjust seasoning if necessary. Serve chilled or at room temperature.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced avocado or sliced cucumbers for extra freshness and crunch.
