Ingredients

  • 1 cup almond flour
  • 1¾ cups powdered sugar
  • 3 egg whites (room temp)
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • Food coloring (optional)
  • ½ cup unsalted butter, softened
  • 1½ cups powdered sugar (for filling)
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • Rainbow sprinkles

Instructions

  • Sift almond flour and powdered sugar together.
  • Beat egg whites to soft peaks, gradually adding granulated sugar until stiff.
  • Fold dry ingredients into meringue until batter flows like lava.
  • Pipe onto parchment-lined baking sheet and tap to release air.
  • Let sit 30 minutes until tops are dry.
  • Bake at 300°F for 15-18 minutes. Cool completely.
  • For filling, beat butter, powdered sugar, milk, and vanilla until fluffy.
  • Pipe onto half of the shells, top with another shell, and add sprinkles to sides.
