Ingredients
Scale
- 12 ounces wide egg noodles
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) tomato sauce
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the Creamy Layer:
- 1 cup sour cream
- 1 cup cottage cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
For the Topping:
- 2 cups shredded cheddar cheese
Instructions
- Cook the Noodles:
Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente, following the package instructions. Drain and set aside. - Prepare the Beef Mixture:
Heat a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned. Add the diced onion and garlic, cooking until the onion softens, about 2–3 minutes.
Stir in the tomato sauce, tomato paste, Italian seasoning, paprika, salt, and pepper. Simmer for 5–7 minutes to let the flavors blend. - Make the Creamy Layer:
In a medium bowl, mix the sour cream, cottage cheese, Parmesan cheese, and parsley until well combined. - Assemble the Casserole:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish. Spread half of the cooked noodles evenly in the dish. Layer half of the beef mixture, followed by half of the creamy mixture. Repeat the layers, finishing with the remaining beef mixture on top. Sprinkle shredded cheddar cheese evenly over the casserole. - Bake the Casserole:
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly. - Serve and Enjoy:
Let the casserole cool for 5–10 minutes before serving. Garnish with additional parsley if desired.
