For the Brownie Layer:
- 1 box fudgy brownie mix (plus ingredients required by the package directions)
For the Mint Cream Layer:
- 1 stick (113g) unsalted butter, room temperature
- 3 ounces (85g) cream cheese, room temperature
- 2 1/4 teaspoons peppermint extract
- 1 pinch kosher salt
- 1 3/4 cups (198g) powdered sugar
- 1 tablespoon heavy cream
- Green liquid food coloring (optional)
For the Chocolate Ganache:
- 3 ounces (85g) semi-sweet chocolate, chopped
- 1/3 cup heavy cream
Optional Garnish:
- 12 chocolate mints (e.g., Andes), finely chopped
Instructions
- Preheat the Oven and Prep the Pan:
- Arrange a rack in the center of the oven and preheat according to the brownie mix directions.
- Lightly grease an 8×8-inch baking pan with cooking spray. Line with parchment paper, leaving an overhang for easy removal.
- Make the Brownie Layer:
- Prepare the brownie batter as instructed on the package.
- Pour the batter into the prepared pan and smooth it into an even layer.
- Bake according to the package instructions for an 8-inch pan.
- Let the brownies cool completely in the pan on a wire rack (about 1 hour).
- Prepare the Mint Cream Layer:
- In a bowl, use a hand mixer to beat the butter, cream cheese, peppermint extract, and salt on medium speed until smooth (about 1 minute).
- Sift the powdered sugar into the mixture, then add the heavy cream and green food coloring (if using). Beat on medium-high speed until fluffy (30 seconds).
- Spread the mint cream over the cooled brownies and refrigerate for 30–40 minutes until firm.
- Make the Ganache Topping:
- Heat the heavy cream in a microwave-safe bowl for 30–45 seconds until very hot.
- Add the chopped semi-sweet chocolate to the cream. Let it sit for 1 minute, then stir until smooth.
- Let the ganache cool slightly (about 5 minutes).
- Assemble the Brownies:
- Pour the ganache over the mint layer, spreading quickly for an even coat.
- If desired, sprinkle chopped chocolate mints over the ganache.
- Refrigerate for at least 30 minutes until fully set.
- Slice and Serve:
- Use the parchment overhang to lift the brownies onto a cutting board.
- Cut into squares with a sharp knife, wiping the blade between cuts for clean edges.
- Serve chilled for the best flavor and texture.
Notes
- Green Food Coloring: Skip the coloring if you prefer a natural look; the flavor remains the same.
- Storage: Store the brownies in an airtight container in the refrigerator for up to 1 week.
- Freezing: These brownies freeze well for up to 3 months. Thaw overnight in the refrigerator before serving.
- Mint Flavor: Adjust the peppermint extract to your taste—more for a stronger mint flavor, less for subtlety.
- Garnish Options: Crushed candy canes or sprinkles can be used instead of chopped mints for a festive twist.
