Ingredients
Scale
- 4 chicken thighs or breasts, skin-on and bone-in
- 1.5 pounds baby potatoes, halved
- 6 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 4 tablespoons butter, melted
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 2 tablespoons fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C).
- Prepare the Ingredients
- Wash and halve the baby potatoes. Mince the garlic and chop the parsley.
- Season the Chicken and Potatoes
- In a large bowl, combine the chicken thighs and potatoes.
- Drizzle with olive oil and melted butter. Add minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Toss everything until evenly coated.
- Arrange on a Baking Sheet
- Line a baking sheet with parchment paper or lightly grease it. Spread the chicken and potatoes in a single layer, ensuring the chicken is skin-side up.
- Bake the Dish
- Place the baking sheet in the preheated oven and bake for 35–40 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the potatoes should be golden and crispy.
- Broil for Extra Crispiness
- If desired, broil the dish for 2–3 minutes at the end to make the skin and potatoes extra crispy.
- Garnish and Serve
- Remove the baking sheet from the oven. Sprinkle fresh parsley over the top and serve warm.
Notes
- Chicken Alternatives: Use boneless, skinless chicken if preferred, but reduce the cooking time by about 10 minutes.
- Potato Substitutions: Yukon gold or russet potatoes can be used if baby potatoes aren’t available. Cut them into evenly sized chunks for even cooking.
- Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.
- Make It Dairy-Free: Substitute butter and Parmesan with dairy-free alternatives for a dairy-free version.
- Add Veggies: Include carrots, green beans, or zucchini for a complete one-pan meal.
