Description

Garlic Parmesan chicken and potatoes is a one-pan meal that combines juicy, flavorful chicken thighs with crispy, golden potatoes. Tossed in a buttery garlic Parmesan sauce, this dish is perfect for busy weeknights or a comforting dinner. With minimal effort and maximum flavor, it’s a crowd-pleaser you’ll make again and again!

Ingredients

Scale
  • 4 chicken thighs or breasts, skin-on and bone-in
  • 1.5 pounds baby potatoes, halved
  • 6 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  • Preheat the Oven
    • Preheat your oven to 400°F (200°C).
  • Prepare the Ingredients
    • Wash and halve the baby potatoes. Mince the garlic and chop the parsley.
  • Season the Chicken and Potatoes
    • In a large bowl, combine the chicken thighs and potatoes.
    • Drizzle with olive oil and melted butter. Add minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Toss everything until evenly coated.
  • Arrange on a Baking Sheet
    • Line a baking sheet with parchment paper or lightly grease it. Spread the chicken and potatoes in a single layer, ensuring the chicken is skin-side up.
  • Bake the Dish
    • Place the baking sheet in the preheated oven and bake for 35–40 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the potatoes should be golden and crispy.
  • Broil for Extra Crispiness
    • If desired, broil the dish for 2–3 minutes at the end to make the skin and potatoes extra crispy.
  • Garnish and Serve
    • Remove the baking sheet from the oven. Sprinkle fresh parsley over the top and serve warm.

Notes

  • Chicken Alternatives: Use boneless, skinless chicken if preferred, but reduce the cooking time by about 10 minutes.
  • Potato Substitutions: Yukon gold or russet potatoes can be used if baby potatoes aren’t available. Cut them into evenly sized chunks for even cooking.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.
  • Make It Dairy-Free: Substitute butter and Parmesan with dairy-free alternatives for a dairy-free version.
  • Add Veggies: Include carrots, green beans, or zucchini for a complete one-pan meal.
