Description
A rustic, sweet-tart dessert with tender rhubarb filling and a buttery oat topping. Serve warm with a scoop of vanilla ice cream.
Ingredients
- chopped rhubarb
- granulated sugar
- cornstarch
- lemon juice
- old-fashioned oats
- all-purpose flour
- brown sugar
- cold butter, cubed
- ground cinnamon
Instructions
Preheat oven to 375°F.
In a bowl, toss rhubarb with sugar, cornstarch, and lemon juice. Pour into a greased baking dish.
In another bowl, mix oats, flour, brown sugar, and cinnamon. Cut in butter until crumbly.
Sprinkle topping over rhubarb.
Bake for 35–40 minutes or until bubbly and golden brown.
Notes
- Swap half the rhubarb with strawberries for a fruitier twist.
