Description

A rustic, sweet-tart dessert with tender rhubarb filling and a buttery oat topping. Serve warm with a scoop of vanilla ice cream.


Ingredients

  • chopped rhubarb
  • granulated sugar
  • cornstarch
  • lemon juice
  • old-fashioned oats
  • all-purpose flour
  • brown sugar
  • cold butter, cubed
  • ground cinnamon

Instructions

    • Preheat oven to 375°F.

    • In a bowl, toss rhubarb with sugar, cornstarch, and lemon juice. Pour into a greased baking dish.

    • In another bowl, mix oats, flour, brown sugar, and cinnamon. Cut in butter until crumbly.

    • Sprinkle topping over rhubarb.

    • Bake for 35–40 minutes or until bubbly and golden brown.

  • Swap half the rhubarb with strawberries for a fruitier twist.
